PREPARING THE MACHINE FOR USE;
Secure the machine on the table using the vice and place the lever in the hole of the cylinders. When the machine is to be used for the first time, it is necessary to clean it with a dry cloth to remove excess oil. Clean the rollers, pass a small amount of dough.
MIXTURE PREPARATION;
Measurements for 6 people.
Ingredients: 500 gr soft wheat flour and 5 eggs; You can use 1 glass of water instead of 5 eggs. For a delicious pasta, mix 250 gr soft wheat flour with 250 gr hard wheat flour. Do not add salt! Put the flour in a bowl and pour the eggs into the middle. Mix the eggs with a fork and mix them completely with the flour. Knead the resulting dough with your hands until it is completely homogeneous and reaches the desired consistency. If the dough is too hard, add water; if it is too soft, add flour. A dough that is at the right consistency should never stick to your fingers. Remove the dough from the bowl and place it on a lightly floured table. If necessary, continue to knead the dough with your hands and cut it into small pieces. A tip; do not use eggs that have just been taken out of the fridge!
PREPARE DOUGH AND PASTA PRODUCED WITH “AMPIA”
Pull the regulator of the machine outwards and bring it to the number 1 so that the two flat cylinders are completely open (approximately 3 mm). By turning the handle, pass a piece of dough between the rollers.
Repeat this operation 5-6 times, doubling the dough and adding flour in the middle if necessary. When the dough takes a regular shape, turn the regulator to number 2 and pass it between the rollers only once. Then pass it through 3 times again until it reaches the desired thickness. (min. thickness – 0.2 mm n..9) Cut the dough with a knife widthwise into lengths of approximately 25 cm (=10) place the arm in the hole of the cutting rollers and while rotating it, pass the dough to obtain the preferred pasta type.
If you wish, you can pass it through the front gear for thin pasta (1.5 mm TAGLIERINI) or through the middle gear for thick pasta (6.5 mm FETTUCCINE) you can get it.
Note1 – If the rollers cannot‘cut’ or if they do not separate the dough well, this means that the dough is too soft. In this case, we recommend that you pass the dough between the flat rollers after adding flour to the mixture.
Note2 – If the dough is too hard be careful not to overcook the dough, otherwise the rollers will not be able to take the dough.
Boil plenty of salted water into which you will pour the pasta. (Approximately 4 liters for 1/2 kg of pasta) Fresh pasta cooks in a short time, from 2 to 5 minutes depending on its thickness. Mix carefully and strain after cooking.
MACHINE MAINTENANCE;
1-During use, the flat rollers underclean the scrapers occasionally with a piece of kitchen paper.
2-Never wash the machine with water or in the dishwasher!
3-Use a brush and a wooden stick to clean the machine after use
4-If necessary, a few drop vaseline oil.
5-Do not pass knives or kitchen cloths between the rollers.
6-After use, store the machine and its accessories in their own boxes.
