MARCATO PASTA FRESCA NOODLE MACHINE

WARNINGS AND RECOMMENDATIONS FOR YOUR SAFETY;

• When attaching or detaching the motor to the machine, be careful not to damage the power supply. make sure the cable is not plugged into the socket.
• Do not unplug the cable when your hand is wet or damp.
• Do not leave your machine unattended, especially when it is plugged in.
• Do not use your machine in areas that may come into contact with heat sources (e.g. stove) or in areas that may be wet (e.g. sink).
• Use the device only as described in this manual and for a maximum of 15 minutes at a time.
• Use only the supplied cable and extensions that comply with the values ​​specified on the motor label.
• When working with a machine with a motor, avoid wearing a tie, scarf or long jewelry; also don't forget to wear a hair clip to prevent your hair from falling down.
• Electrical repairs must be done by authorized persons. Unauthorized persons are not allowed to access the internal parts of the motor.
• The amount of ingredients used (solids and liquids) should not exceed the mark inside the bowl.
• After using all three functions of the machine (kneading-sheeting-extracting), the machine should be turned off and the lid should be left open for 10 minutes.

CONTROL PANEL;

1. On/Off button.
2. Red LED light (left) (blade chamber): if the light is on, the lid is not fully closed.
3. Blue LED light: if the light is on, the machine is ready for use.
4. Red LED light (right) (lid): if the light is on, the lid is not fully closed.
5. Control key: press this key to move the blade.

PREPARING THE MACHINE FOR USE;

• Wipe the entire machine with a damp cloth before first use.
• To clean the rollers, pass a small piece of noodle dough, which you will throw away later, through the rollers.
• Attention! Check the voltage. Make sure that the voltage of the electricity you use is compatible with the values ​​on the machine's value table.

FRESH NOODLE RECIPE;

• 500 g soft-wheat dough
• 4 whole eggs
• Small amount of water

To obtain a better noodle, mix 250 g of soft-wheat flour with 250 g of durum-wheat flour (semolina / durum wheat semolina).

The total of egg and water should not exceed 250 ml.

PREPARATION OF THE DOUGH;

• Adjust your ingredients according to your recipe
• Open the lid of the machine and pour your ingredients into the mixer compartment. Make sure the blade chamber is closed and the red led light is not on.
• Close the lid and press the On/Off button to turn the machine on.
• RECOMMENDATION: Do not use eggs immediately after taking them out of the refrigerator.
• CAUTION: Always make sure the lid is closed to keep the flour inside the machine.

MAKING NOODLEAF;

Separate the dough you made into 4-5 pieces.

Insert the flat rolling pin into the machine. Pull towards you and turnk to set the setting to position 0 and open the gap between the rollers completely.

Pass one of the dough pieces you separated through the rollers.

Repeat this process 5-6 times, fold the sheet each time and add a little more flour if necessary).

Cut your noodle leaf into 25 cm long pieces. Attach the cutting attachment of your choice to the machine and pass the noodle sheet through the cutting rollers to obtain the noodle shape you want.

Note:

• If the rolling pins do not cut the noodles, this indicates that the noodles are too soft: in this case, we recommend adding a little more flour to the dough, kneading it and passing it through the flat rolling pins again.
• If the rolling pins cannot hold the noodles, this indicates that the noodle sheet is too dry: in this case, we recommend adding a little more water to the dough, kneading it and passing it through the flat rolling pins again.

Put your noodles on a damp cloth and cook them instantly. If you want to store your noodles (up to 1 month), use Marcato Tacapasta. You can dry your noodles using.

Your noodles will dry in about 5-6 hours, It will dry depending on the temperature and humidity. You can store it in suitable kitchen containers.

CARE AND CLEANING;

Tip: The recommended thickness setting for fettuccine is number 5. For tagliolini, use setting 7. For the thinnest possible form, pass the noodle sheet twice on setting number 9.

Remove and replace the lid;

• Turn the lid completely (90 degrees) and pull the lid until it is free of the pins
• To replace the lid, repeat the same process in reverse. do.

Installing and removing accessories;

• Insert the accessory into the hexagonal slot on the side of the machine.
• Turn the accessory 30 degrees until it fits into its slot.

Cleaning;

• Unplug the power cord before cleaning and maintaining the machine.
• Never wash the machine and its accessories in the dishwasher.
• Use a brush and wooden stick to clean the machine.
