1- PREPARING THE MACHINE FOR USE;
Fix the machine to the table using a vice and place the turning lever in its slot. Before using for the first time, the machine should be wiped with a dry cloth. To clean the dough roller, pass a piece of dough through the dough roller several times and throw this dough into the trash.
2 - PREPARATION OF THE MIXTURE;
The ingredients required for noodles for one person are basically; approximately 125 grams of wheat flour and one egg. Attention: For the ideal taste, it is not recommended to use freshly taken eggs from the refrigerator! For four people; approximately 500 grams of wheat flour and 4 eggs can be used. You can use water instead of the egg if desired. (1 egg = approximately 80 ml of water)
Add the eggs to the middle of the flour and beat with a fork until they are completely mixed with the flour. Knead with your hands until the dough forms a homogeneous dough. If the mixture is too dry, add some water; if it is too wet or soft, add some flour. A good mixture never sticks to your fingers. Take the mixture out of the bowl and place it on a lightly floured table. If necessary, break it into small pieces with a knife.
3 - MAKING DOUGH AND NOODLES;
In your machine, the dough thickness isThere is a tension lever. Pull the adjustment lever of your machine out and turn it to the “1” position. In this way, the two flat rollers will be completely open. Pass a piece of the mixture through the machine by turning the lever. Repeat this process 5-6 times, if necessary, you can fold the dough and pass it or add some flour to the middle parts.
When the dough takes a smooth shape, pass the dough between the rollers once, at the “2” setting, and then in the same way at the “3” setting. Continue until you reach the desired thickness. Using a knife, divide the dough into 25 cm long pieces. To use the cutting rollers, place the handle in its slot, turn it slowly and pass the dough through it until you get the noodles you want.
Note 1: If the rolling pins do not cut, this is because the dough is too soft. In such a case, add a little more flour to the mixture and pass the dough through the flat rollers again.
Note 2: Similarly, too dry dough may cause the rollers not to cut. Sprinkle some water on the mixture and pass it through the flat rollers again.
